How do I Change my Itunes settings to manual music sync instead of auto sync?

I can’t figure out how to change and i have all the music i want on my ipod and none of it is on my itunes library, so this make it hard to charge my ipod now with out it auto syncing on me. Can some help me!

After listening to all the podcasts in one playlist, the podcasts auto delete on my iPod and show 0 songs. I have another podcast playlist where the podcasts do not auto delete and still show x number of songs? What can I do to have all podcasts auto deleted after listening to them?
